Garlicky Mashed Potatoes (gluten-free & dairy-free)
These creamy flavorful mashed potatoes are dairy free but you would never know it!
Ingredients
- 4 medium Yukon gold potatoes
- 3 cups chicken broth
- 1-2 clove garlic
- 4 tbsp Vegenaise or mayo
- 1 tsp Lemon pepper blend
Instructions
- Bring the chicken broth to a boil. Add potatoes and garlic, cook until tender but still firm, about 15 minutes; drain off all but 1/4 cup of liquid.
- Using a potato masher or electric beater, slowly blend vegenaise and lemon pepper seasoning into potatoes until smooth and creamy.

One of the things I missed the most when I stopped eating dairy was creamy mashed potatoes. Many of the recipes out there recommend using nut milks to replace cream in the mashed potato recipe, but I could always taste it. One day I was experimenting in the kitchen, trying to figure out how to recreate the mashed potatoes my mom used to make but without the cream and butter. I succeeded and this recipe was born! Enjoy!
